don’t mind if i do….

Are you bored/tired of pumpkin yet? I’m not! I had a little less than a cup of canned pumpkin sitting in my fridge waiting to be used this morning…. the result — Pumpkin Chai Smoothie!

The recipe is very precise:

  • several scoops of nonfat vanilla yogurt
  • a hearty spoonful of peanut butter
  • a whopping spoonful of cottage cheese (for texture/thickness… I didn’t have any bananas!)
  • a cup of pumpkin
  • a generous teaspoon of pumpkin pie spice
  • a dash of nutmeg
  • and a 3 second pour of spiced chai tea concentrate
  • ice

And blend — so delicous. There are a billion different ways to go with this… enjoy!

    OMG I can’t wait to do this in the AM. I have all of these ingredients in my fridge right now. Why have I not thought of this brilliance?!
