Salads on Salads

Do you all feel like you need a post-fourth of July detox of sorts? In lieu of wildly expensive juices and strange cayenne pepper drinks I think I’m just going to eat leafy green things. Like, all the leafy green things. Back in midst of the wedding whirlwind I was in town for 48 hours and decided to throw a small salad dinner party. Which is pretty much exactly what it sounds like… I will admit that a salad party sounds pretty unexciting, but it wasn’t! And it was delicious!

I made the first salad in this post (I added peas and I think this one was my favorite — also, who knew raw asparagus was so good?). I also made a version of this one (we make this at least once a week at my house… although this might have to do with the fact that Safeway only sells bags of kale the size of a toddler and we have to eat it before it goes bad — or maybe because this salad is just amazing). Finally, I made a potato salad with a mustard-y dressing… I have no recipe and it wasn’t my favorite so we’ll forgo details. LJ also brought a  pretty amazing Taylor Gourmet salad to round things out.

That kale salad looks amazing! We have a CSA share so we always have tons of veggies and greens that are about to go bad. Every week is like a race against time–it is pretty nerve wracking. We made this salad last night and it was awesome (as most things that contain goat cheese are): http://www.bhg.com/recipe/salads/roasted-beet-goat-cheese-and-fennel-salad/.
